Smoked haddock gratin
Serves 4

Ingredients
A splash of vegetable oil
2 leeks, trimmed and finely sliced
A knob of butter
300ml double cream
150ml whole milk
A pinch of freshly grated nutmeg
A sprig of fresh thyme, leaves only
2 tbsp plain flour
600g maris piper potatoes, cut into very thin slices, ideally using a mandolin
350g smoked haddock, ideally undyed, sliced into 1cm pieces
Salt and freshly ground black pepper
Green salad, to serve

Method

Heat the oven to 180C/gas 4.
2 Pour a splash of oil into a heavy-based ovenproof pan (an ovenproof frying pan or oven-safe casserole dish, about 25cm in diameter). Set over a low heat and add the leeks and a pinch of salt. Cook gently while stirring — to soften, not colour — for about 10 min. Scoop out the leeks, set…
